The pumpkin and Oktoberfest beers have hit the stores up here, football has started, and there is that chill in the air. (People south of New England have NO idea what I am talking about, but you will. Oh you will.) Fall has to be one of my favorite seasons but it is bittersweet since it signals the end of Summer. That didn't stop me from whipping up a cool cucumber salad though. Nothing brilliant here, just cut 1 cucumber however you like - I decided to remove the seeds, leave the skin on (and why wouldn't you want to? Such great color and texture ... come on people), and cube it - and place it in a bowl. In a separate, smaller bowl combine 1 tbsp. rice vinegar, 2 tbsp. light sour cream, as much fresh dill as you can handle (I LOVE dill so I put in a healthy 1 tsp.), and a few turns of the pepper mill. Once well mixed, pour over cucumber, tossing to coat, and chill in fridge.
We'll miss you Summer, but something tells me that if I ever get sad that you and I haven't hung out in awhile, I can just crank the heat in my apartment and cook some cool treats.

I love it! [Gasp!] Too much skin for my liking, but hey, that's what summer is all about, right? Toes out, shorts...skin. :) But there's something exciting knowing that we're moving into those awesome autumnal foods: squash and potatoes (well, those are always in season but always well suited for the fall). Oh yeah, and french fries with curry sauce.
